Working with Vector graphics is very different from Bitmap graphics. Instead of manipulating a fixed quantity of pixels (like Photoshop does), Adobe Illustrator uses "formulas" to draw lines, curves, shapes and gradients that are perfectly formed no matter how large or small you want them to be. You can "rasterize" an Illustrator image and turn it into as many pixels as you like, but it is a one-way trip.

Strokes
"Stroke" means something a bit different in Illustrator - it is the actual line or curves between anchor points. The thickness of the stroke is known as its "Weight" and is generally measured in "Points". A straight line has two anchors, whereas a curve can have several points that help define the shape of the curves.
One of the best features of Adobe Illustrator is the "Direct Select" tool (the white arrow icon) which allows you to move an individual point to make adjustments. You can use the pencil tool to do your best to draw what you want with the mouse (very difficult, of course) and then nudge the points Illustrator made to get exactly the shape you were going for.

The CC version of Illustrator makes new files in a slightly different way. Use this screenshot to make a new canvas that is 1920 x 1080 instead.

Fills
"Fill" is the area enclosed by a stroke. In addition to solid colors, a fill can have a Gradient, fading from one color to another in several ways.
